Red Velvet Cupcakes with Swiss Meringue Buttercream

Hi! I've been busy... Oh well, it's the same time of the month again (where it's the busiest and more stressful time at work) and my immune system finally took a day off.

After surviving with very little sleep the past few weeks (actually with 2 kids, make that the past few years) from the lil' man having runny nose, 2 times! And the princess catching it the second time...

To make matters worst, somehow their biological clock went all haywire... Imagine your kids sleeping from 8p.m. - 12a.m. only to wake up and play till 4a.m?! The Man of the house and Me have been severely deprived of any decent sleep for God-knows-how-long. So, do forgive my weird rantings and if my writing seems disjointed...

Homemade Char Siew

My philosophy for late night supper is very simple. Make it worth the calories! (Evil grin). I was super excited with the idea of making my own yummilicious "Char Siew" (Barbeque meat) as I assumed it will take a lot of effort, much experience and some rustic looking oven to make a relatively good piece of BBQ meat. 

When my talented Tai-Tai friend told me that it's really easy with the magical pressure cooker, I was more convinced that maybe, just maybe, I could pull this off. :)

Pumping While Driving

Women are born to multitask. I mean, we can drive, talk on the phone, put on makeup and express breast milk, all SIMULTANEOUSLY. Oh, while doing all that, we are thinking what should we eat for lunch, dinner and supper. 

This have been my routine for the past 16 months. Every day, when I drive to the office and from the office to home on weekdays, I would set up my breast pump parts before I start my journey through the predictable traffic jam. (Yawn...). Now, to be honest, this is not that difficult to do, but it does take a lot of faith to even consider doing this. Plus, it will depend whether your pump is battery operated or not. I use the Medela Freestyle™ - Hands-Free Breastpump and it uses a rechargeable battery. I LOVE MY PUMP. :)

Every mother is different in terms of her level of comfort with PIP (Pumping in Public). Some prefer the quiet assurance of being in a locked room, some can't relax at this notion of the openness (I am referring to the fact that it is done in an open space, not talking about the opposite of narrow-mindedness) while some, like yours truly here, just need a time to pump and as long as there is a scarf or cover , basically I can get the job done, anywhere.... happily. :)

Japanese Condensed Milk Bread

This bread recipe went viral on Facebook a few weeks ago and the moment I saw the lovely pictures of this bread, I knew I had to try this. I took me a while before I had all the ingredients, especially condensed milk as I don't keep any at home normally.

I am so pleasantly surprised that the bread turned out so soft and cottony! The bread is not too sweet and had the buttery and creamy aroma of condensed milk. Wow... And the bread looks so beautiful, just like those artisan bread. Thumbs up from my family and friends too! :) 

Steamed Moist Chocolate Cake

Oh my! This cake is really delicious and so simple to make. It was in fact the first ever cake that I've made when I started baking & cooking a few years ago. Then, this recipe went viral among Asian food bloggers and on Facebook. Since I had just bought a new, and magical pressure cooker then, I decided to give this recipe a try. The results was good and although it was not cooked through the first time, but I think if you like a cake with molten chocolate lava in the middle, then this will be perfect.
