Purple Sweet Potato Buns
Now, I have been attracted by this recipe by the lovely purple color of the buns. Hence, without any delay, I asked my mummy to help me get some purple sweet potatoes for me. I can't wait to try out the recipe, which has been circulating around the breadmaker group that I am in. So, here are the steps of making this yummy and soft buns...
Salt ~ 4.5g or 1 teaspoon
Steam the sweet potato for about 20minutes (I used my pressure cooker) and add 20g-30g of fresh milk or sugar-free soy milk. Mash it up until smooth or you may leave some small bits if you prefer to see some potato bits in the buns.
Then, add all the other ingredients into the bread maker pan in the order of liquid, sweet potato puree, dry ingredients and lastly yeast. Choose Program 10 on the Noxxa bread maker for "Dough" and let it knead for 10 minutes before adding the butter. This is after 30 minutes of kneading.
Let the dough rest for 30 minutes. Oil hands with VCO (virgin coconut oil) and shape into 16 balls and place them in a greased tray. The dough is easy to manage. :) Let the balls rise again until double its size.
Brush some VCO on the top of the buns and sprinkle with chia seeds or any nuts or topping of your choice. Bake in a preheated oven at 180C for 15 minutes.

Fresh Milk ~ 20-30g

Egg ~ 2 large/100g
Fresh Milk ~ 110gSalt ~ 4.5g or 1
Sugar ~ 45g
Bread Flour ~ 340g
All purpose flour ~ 35g
Yeast ~ 4.5g or 1.25 teaspoon

Intructions:
1. Steam A until soft and mash with milk.
2. Add the rest of the B ingredients into the bread pan i.e. liquid, semi-liquid (Sweet potato puree), dry ingredients and finally yeast on top.
3. Choose the program for Dough and after 10 minutes, add butter and let the kneading complete.
4. Let the dough rest for 30 minutes.
5. Oil hands with VCO (virgin coconut oil) and shape into 16 balls and place them in a greased tray.
6. Rise until dough balls double in size.
7. Egg wash (I used VCO) and sprinkle with topping of your choice.
8. Bake in preheated oven at 180 deg C for 15 minutes.
